Serious Chocolate Brownies: Step by step photos.

It is the season of celebration. There is bound to be an open house on each day this month.

Dr Zuraini ordered 2 pans of SCB for her open house and since they keep well, I made them yesterday and delivered today. My best mate Maria requested that I upload step by step photos on the preparation of this brownies, which recipe can be found here. So, here are the photos.

This brownies can be prepared in less than 30 minutes, with all your ingredients already on your work top. You will need 2 big bowls, a wooden spoon and balloon whisk.

1. Preheat your oven to 180C. Line your pan with greaseproof paper as shown in (a) (extra long on two sides of the pan). I usually use 8"x8" pan for one recipe.

2. Melt butter and chocolate in a bowl using double boil method or just pop them in the microwave. (b)

3. In another bowl, whisk lightly the eggs and brown sugar until just mixed. Do not overmix. Your mixture should look something like in (c), slightly frothy.

4. Add the chocolate-butter mixture into the egg-sugar mixture (d). Mix well.

5. Add the sifted flour-cocoa powder mixture (e). Mix well.

6. Add chocolate chips (f). Mix well.

7. Pour into pan (g). Bake for 35-40 minutes. Do not overbake. To test, insert skewer. It should come out clean, not sticky (lupa pulak nak snap gambar skewer after testing the baked brownies).

Kuih Samprit

We are in the midst of Syawal celebration and I am still baking cookies. Umar loves this Kuih Samprit so much, he can finish a whole jar on his own. I am posting the recipe which was adapted from TiffinBiru. Umairah likes the Butter Cookies and I will post the recipe later.

300 gm butter (SCS)
140 gm icing sugar
2 yolks
1 tsp vanilla essence
240 gm plain flour
100 gm corn flour
160 gm custard flour
cherries, diced

Pink Velvet, so nice...



Thick frosting. Will reduce it the next time I make this. Will be soon...


Made this Pink Velvet cake last Sunday. It is so delicious, the kids love it. This recipe is a keeper. Might even be a new product for bayudelights.

Pink Velvet Cake, adapted from KitchenGuardian.

Ingredients:
125 gm butter (SCS)
300 gm sugar
2 eggs
1 tsp vanilla essence

225 gm superfine flour - no need to sift, ha ha
2 tbsp corn flour
2 tbsp cocoa powder
125 ml plain yougurt + 125 ml evaporated milk --> in replacement of buttermilk. Where to find buttermilk in Transkrian?
1 tbsp rose pink colouring
1 tsp vinegar + 1 tsp baking soda --> combine and leave to frizz

Method:
1. Beat butter, sugar, eggs and vanilla until fluffy.
2. Add in flours and cocoa powder alternately with the yogurt and milk mixture. Add color.
3. Finally, fold in the vinegar mix. Mix well.

I used a 10"x10" pan and baked at 170C for 35 minutes. Perfect.

Once cooled, spread the cream cheese frosting and sprinkle the dessicated coconut. Sedap sesangat!!! Silver dragees tu saja je tabur..

Cream cheese frosting:
250 gm cream cheese (Tatura)
125 gm butter (Buttercup)
50 gm icing sugar
200 gm whipped topping cream
1 tsp vanilla essence

1. Beat cheese and butter until fluffy.
2. Slowly beat in sugar until well blended.
3. At low speed, add cream and vanilla.
